<p style="text-align: left;">Lobster fishing is most active in the Gulf of Maine, Bay of Fundy, Southern Gulf of St. Lawrence and coastal Nova Scotia. In Canada, typically the lobster season peaks twice a year, once in the spring (April-June) and another in December. Each area is subject to its own season, ranging from eight weeks to eight months in length. Canada accounts for more than 60% of lobsters landings in North American and provides more than half of the world&#8217;s supply of Lobster.</p>
<p>Summer is synonymous with lobster. Some of the highest lobster landings are in the summer months. Lobsterman work around the clock to meet the demand of the tourists on the coast. You&#8217;ll find more lobsters in the summer since they migrate in shore to warmer waters, many shedding their shells. After lobsters molt they need to feed. And hungry, active lobsters are easier to trap! Much of the product between July and late September is characterized by a soft-shell. These soft-shell lobsters are not as strong and are more difficult to transport live. What&#8217;s more soft-shell lobsters have less meat per pound than hard-shell lobsters. You&#8217;ll see a couple price levels in the summer; a cheap price for soft-shell lobsters, and higher prices for the limited hard-shell lobsters.</p>
<p>From mid September to late November lobster fishing is in full swing. The haul is great, especially for <a title="Hard-Shell-Lobster" href="http://www.lobsteranywhere.com/lobster-tail-blog/buy-hard-shell-lobster.html">hard-shell lobsters</a>. Much of the lobster inventory will be used to meet the demand for Christmas dinners and New Years celebrations. A bulk of the hard-shell lobsters are shipped overseas to Europe and Asia where they fetch top dollar. In anticipation of seasonal changes and when harvest exceeds demand, the excess is stored, or pounded to be made available when the catch is slower.</p>
<p>Lobsters are less active as water temperature drops. When water temperature are very cold (January through March), there is not too much lobster fishing going on. Cold weather, wind and rough seas make lobstering difficult. There are a few brave souls braving the elements. The quality of lobsters picks up again in May and June, just before molting, when the lobsters have more meat.</p>
<p><strong>The Best Months of Year to Buy Lobster</strong></p>
<p><em>January, February and March</em><br />
Lobsters are scarce and the prices are at their highest. During the winter months lobsters move further offshore, requiring lobster boats to travel greater distances, and the harsh weather makes it more difficult for fishermen to work.</p>
<p><em>April, May &amp; June</em><br />
Prices will peak in early spring, but as the weather warms, lobster fishing picks up and prices drop in May and June. May is typically one of the best month of the year to buy live lobsters.  The supplies are very good as the demand from summer resorts has yet to kick in. The lobsters are generally at their firmest and meatiest after the cold weather months.</p>
<p><em>July, August and September</em><br />
New shell lobster are usually harvested from late summer to early fall. Native soft shells are plentiful and cheap; hard shells are less abundant and prices are higher. Heavy demand gradually drives prices up in August. Prices on hard shells begin to drop in September. Demand also drops more when back-to-school shopping hits.</p>
<p><em>October, November, December</em><br />
Next to late spring, fall is one of the best times of year to buy good, hard-shell lobsters. After Labor Day all the tourists have gone home and the lobster landings are at their highest. Lobster prices stay reasonable, rising a bit at Christmas time. The price heads up again sharply as winter weather sets in.</p>

Nantucket is overrun by lobsters in <em>One Crazy Summer</em> (1986), and they become targets for a neighborhood shooting practice.  In Leonard, Part 6 (1987), Bill Cosby, who plays a secret agent, is attacked by lobsters.</p>
<p>And there are many more movies to enjoy with your lobster dinner. In <em>Miracle Mile</em>, 1988, the lead actors buy two lobsters and set free instead of eating them, and wish to free all the lobsters in the tank. But, the plot is actually a story about the start of a nuclear war. In A <em>Lobster Tale</em>, 2006 a man catching lobsters also nets a strange seaweed moss with healing powers that becomes associated with the lobster.</p>
<p>There are other themes that go with dinner. Jennifer Beals eats lobster suggestively in a scene from <em>Flashdance</em> (1983), and in the <em>Naked Gun 2 ½</em> (1992), with Leslie Nielsen and Priscilla Presley, the stars enjoy a hilarious lobster dinner. Then there is <em>Summer Rental </em>(1985) with John Candy, who is overweight and loves to eat, but can’t afford lobster, which was considered a real luxury when this film was made. What do you do first? Some people are uncomfortable with the beady eyes of the lobster staring at them and the whole creature taking up their plate, but have experienced the rewards of taking apart and eating the best lobster. They move their focus elsewhere, such as to the tail or claw meat, and tackle it first. <em>(Pictured below, an impressive crusher claw).</em></p>

If you are hungry and can’t wait, there is substantially more meat in the tail and it is easier to push out with a fork. Customers may favor the claws for the sweeter and tender meat, and there are two to devour. Perhaps you eat other parts of the lobster that others never taste: the body, legs, or tail flipper. The tail and claws are easy to eat, but don’t forget the knuckle meat within the shell between the claw and the body of the lobster.</p>
<p>When lobsters flap their tails and move around in the water, the twisting movements tend to make the tail meat more fibrous than the claw. The claw muscles, which are used less, are softer. The crusher claw, the larger of the two, which a lobster uses for crushing, is tougher than the pincher claw that pulls underwater prey apart. Since claws can be puny in terms of meat, most people rely on the tail meat to satisfy their appetites. Others enjoy the inside body of the lobster: the vein, intestine, roe (or eggs). If you do consume these parts, it is recommended to wash them out.</p>
<p>Taking a lobster apart before eating is an art. It involves protecting your clothing with a lobster bib and napkins, and taking the time to crack the lobster open, and remove the meat from the tail, claws, and legs. This whole process can be messy, and it may leave you behind others dining with you who are not so brave. You may have to adjust to the idea of finishing last, so here are some helpful tips on how to eat a lobster:</p>
<p>With nutcracker, small fork or picks on hand,</p>
<ul>
<li>Attack the claws first: Separate the claws from the knuckles, then crack the knuckles in half with a nutcracker and remove the meat with a fork.</li>
</ul>
<ul>
<li>Pull off the legs: Twist them and roll out the meat (with a fork or another tool).</li>
</ul>
<ul>
<li>Crack open the Tail: Bend the tail backwards to crack off the end of shell and twist the tail fins and pull them off. Use your fingers or a fork to push the tail meat out of shell.</li>
</ul>
<ul>
<li>Use the extras sparingly: If you enjoy the green liver, or tomalley, from the body (unappealing to some people), mix it with lemon juice or butter to make a spread for bread or crackers. It is not highly recommended to consume it regularly, as it may contain some contaminants.</li>
</ul>
<p>Tip:  If you are at home, use a rolling pin to push the meat out of the legs.</p>

<p>The legend behind the origin of taffy is that it acquired its salt water taste from mistakenly being soaked in sea water. In actuality, saltwater has nothing to do with the recipe. Taffy is made of sugar, corn syrup, cornstarch, butter, salt and water. So, the old story is up for debate, along with a notion that taffy can be made that does not stick to teeth. For lobster lovers who do not want to handle <a title="live lobster" href="http://www.lobsteranywhere.com/maine-lobster/category/MLOB/Maine-Lobster.html">live lobster</a>, lobster tails are the right choice for you to throw a Memorial Day lobster party. Add a little zest to your summertime fun with this recipe for lobster tails with balsamic dressing.</p>

Select 6-7 oz. lobster tails, 8-10 oz., 16-20 oz. tails<br />
1/4 cup extra-virgin olive oil<br />
salt and pepper<br />
1/2 tsp. cayenne<br />
1/4 tsp dry mustard<br />
1 tbsp chopped shallots<br />
1 Tbsp. packed light brown sugar<br />
2 tbsp balsamic vinegar</p>
<p>Cut the bottom of the lobster tail shell with kitchen scissors, so they will lie flat. Put in shallow dish. Mix remaining ingredients together and pour over tails. Marinate for at least two hours in the refrigerator, turning a few times. Broil tails, basting with marinade, for 12-15 minutes. Alternatively, you can grill your lobster tails.</p>
