The secret to a great tasting Maine lobster roll  starts with fresh  Maine lobster. Boil several lobsters, then let them cool.  Crack open the lobsters and use the best meat: tail and claws.  We don’t use the knuckles for our lobster rolls, we use only the best part of the lobstah!

Here is what you will need:

5 or 6 lobsters
3 heaping tablespoons of Hellmann’s or Cains mayonnaise
2 sticks of celery chopped finely
2 dashes of sea salt or kosher salt
dash of  pepper
1  dash of paprika
New England style hot dog rolls
1/4 cup unsalted butter, melted

1. Mix all ingredients, except the butter and hotdog rolls; keep chilled until ready to use.
2. Brush unsalted butter on each side of hotdog roll and grill in pan or on barbecue.
3. Split the hotdog rolls (but not all the way through the bread) and fill with the lobster mix.

Serve with chips, pickle slice and coleslaw.  Best to enjoy outside on a beautiful day!

The World’s Finest Peanut Butter Chocolate Cookies in Freeport, Maine

Flourless Peanut Butter Chocolate Chip Cookies

Peanut Butter Chocolate Chip Cookies

Ingredients:
1 cup firmly packed brown sugar
1 cup smooth peanut butter (chunky may be used if preferred, but it
tends to be more dry than smooth peanut butter)
1 large egg
1 teaspoon baking soda
1/2 teaspoon vanilla extract
1 cup milk chocolate chips (or morsels)

1. Stir together all except the chocolate chips (or morsels) in medium
bowl, using a wooden spoon. Stir in chocolate chips/morsels after the
others are well mixed.

2. Drop cookie dough by rounded tablespoonfuls onto a parchment paper-
lined baking sheet

3. Bake at 350 F for 12 minutes or until puffed and golden (Cookies
should still be soft in the center). Cool on baking sheet 5 minutes,
remove to wire rack.

After molting and before the lobster’s shell becomes “hard” again is when the terms “soft shell”, and “new shell” are used to describe the Maine lobster.

How to Grill Lobster

Memorial Day is fast approaching and we are readying our grills for the summer season. One of the best things to kick off the summer season is  lobster on the grill. Grilled lobster is quick and easy. Take the plunge and discover how deliciously simple it is to grill lobster at home. If you can light a grill, you can grill lobster tails. Here is a simple recipe for grilled lobster using either frozen lobster tails or whole, live lobsters. Our grilled lobster recipe is uncomplicated. You do not want to overpower the sweet, delicate flavor of the lobster meat. Try pairing grilled lobster with a nice steak or fresh shrimp!

How to Grill Lobster

What You Need for Grilled Lobster Tails

Four 8-10 oz. Lobster Tails or  four 1 1/2 to 2 pound live lobsters.
1 to 2 tablespoons of olive oil
1 stick of unsalted butter
Kosher salt and freshly ground black pepper to taste

Directions for Grilled Lobster

1. Thaw tails in the refrigerator.
2. Brush grill grid with oil and prepare a medium-hot fire in a charcoal or gas grill. As the grill heats, prepare lobster tails.
a. Set each lobster tail on a cutting board with the translucent membrane down, curve shell facing up.
b. Now butterfly your lobster tail.  With kitchen shears or heavy knife, cut through the curved shell and meat, leaving membrane intact.
c. Open tail gently like a book so its hinged in the center.

3. Use about 1 teaspoon of olive oil for each lobster tail; rub onto the cut surfaces of the lobster meat, and season to taste with salt and pepper. The olive oil keeps the lobster from drying out on the grill.

4. Place lobster tails on the grill , meat-side up. Grill lobster, with grill lid closed, until the meat is opaque, 6-8 minutes, turning once. Be careful not to overcook! Squeeze fresh sliced lemon half over lobster and drizzle and serve with melted unsalted butter

Grilling Whole Lobster

1. Par boil your live lobsters first for approximately 4 minutes, drain and cool slightly.
2. Turn lobster belly side up and cut the lobster lengthwise completely through the meat and shell to yield two halves per lobster. Discard the dark stomach (a gritty sac) that’s located behind the eyes, and the soft green tomally (liver). Rub olive into the meat as in the grill lobster lobster tails above (step 2).
3. Start the lobster meat side down on grill, and then grill 8-10 minutes, turning once.

Lobster Bisque from Down East

The name “bisque” came later than the soup, which was originally  just called plain thick lobster soup.

Lobster Bisque Ingredients

5 cups fish stock or chicken stock lobster-bisque
2/3 cup uncooked rice
1/2 cup butter
3 celery stalks, scraped and cut into fine strips
2 carrots, scraped and cut into fine strips
1 leek, trimmed and sliced fine
1 onion, sliced thin and divided into rings
2 to 2 1/2 pounds lobster, 1 large or two small
1 cup white wine
3 tablespoons brandy
1 1/2 cups heavy cream
Salt, pepper, and cayenne
3 tablespoons minced parsley

Makes 8 Servings

Boil stock with rice for 45 minutes. Heat half of the butter in a large kettle, add the vegetables, and stir over medium heat for 3 to 4 minutes. Split lobsters, take out sac and intestinal vein, and arrange lobster halves cut side down on the vegetables. Cover and simmer for 4 minutes. Turn lobster halves and stir with the the vegetables until shells are bright red. Add wine and brandy, cover, and simmer for 7 minutes. Take out lobster, remove meat from shells, and set aside.

Pound the shells with a mallet and return them to the kettle with the stock and rice. Simmer uncovered, stirring frequently, until liquid is reduced to 4 cups. Strain off the liquid, set it over medium heat, and whip in the cream and remaining 1/4 cup butter. Dice lobster meat and add it to the bisque. Add seasoning to taste and cook until lobster  is heated through. Sprinkle with parsley and serve in warmed soup cups.

Note: At the season of the year when lobster shells are very soft , or if chicken lobsters are used, the shells can be crushed to a paste and pureed a blender to add color and flavor to the bisque.
